Amish Noodles

Hey guys! As most of you know, I have issues with cooking sometimes due to my health issues. But settling for frozen foods or delivery is often going to make my symptoms worse! Many spoonies react poorly to processed and fast foods. Sometimes you need something easy to make that is delicious.

This is a recipe for Amish Noodles. These noodles are great as a side to chicken, paired with a mashed potato. I love to eat them by themselves though- because they are full of flavor. While not the healthiest meal ever, its comfort food at its finest. You could also replace the chicken flavor for beef, using beef broth and a beef bouillon cube. If you're a vegetarian, go veggie and add some vegetables! Regardless, the starch in the egg noodles will thicken the broth, giving an almost gravy texture. Its PERFECT.  


12 oz egg noodles

30 oz chicken broth

1 bouillon cube

1/2 tsp olive oil (can use butter instead)

A pot with a lid


  1. Place broth, bouillon cube, and olive oil into a pot. Bring to a boil.

  2. Once broth is boiling, dump noodles into boiling water. Remove from heat and stir well.

  3. Mix every 10 minutes, for a total of 3 times over 30 minutes. Your pasta should have absorbed most- if not all- of the liquid in the pot. Season with a bit of pepper and serve!
